Management Team

Jack Tuason

Founder

  • Member of the Board of Trustees at Enderun Colleges, teaches Principles in International Tourism and Hospitality
  • Earned his BS in Hotel Administration from University of Las Vegas in Nevada
  • Started his career as front office manager of Hyatt Regency Monterey, and then director of rooms division of Hyatt Regency San Francisco
  • Worked for Pan Pacific Hotels and Resorts and was assigned to properties in Manila, Malacca, Kuala Lumpur, and Singapore
  • Became director of HSAI Raintree and general manager of its property, Discovery Suites, from 1999 to 2005
  • Founded Ambergris Solutions (now known as Telus International Philippines)

Edgardo Rodriguez, PhD

President
Dean, College of Business, Technology, and Entrepreneurship

  • Earned his MBA in The East-West Center at the University of Hawaii
  • Earned his PhD in Management Sciences and Statistics from Rensselaer Polytechnic Institute, New York
  • Was also part of the Special Program in Development Economics at Harvard University
  • Worked in The World Bank in Washington, D.C., as head of the bank’s Corporate Budget Unit
  • Worked as a management specialist at the Asian Development Bank in Manila as executive secretary to the Development Effectiveness Committee of the Board of Directors
  • Taught for fourteen years at graduate schools in the United States, as associate professor at Graduate School of Industrial Engineering of Rutgers University in New Jersey, then as adjunct professor of Management and Information Sciences at The American University in Washington, D.C., and at Virginia Polytechnic Institute in Virginia
  • Concurrently president of XenXaTech, Inc., a management consulting firm specializing in business intelligence systems

Bobby Horrigan

Managing Director,
Enderun Hospitality Management

  • Graduated from Les Roches International School of Hotel Management in Switzerland, and further honed his management expertise at the School of Hotel Administration of Cornell University
  • Experienced hotelier who has worked for properties like Grand Hyatt Hong Kong and Olympia Courtyard Suites
  • Former Vice President/General Manager of hotel operations of HSAI-Raintree
  • Previously ran two properties: Discovery Suites in Ortigas Center and Discovery Country Suites in Tagaytay
  • Board director of the Hotel and Restaurant Association of the Philippines (HRAP)
  • Current General Manager of Acacia Hotel in Alabang
  • 2013 Mabuhay Gold Awardee, given by The Association of Human Resources Manager (AHRM) of the hotel and restaurant industry to the best hotelier/restaurateur who has elevated the standards of the industry globally

Chef Cheong Yan See

Culinary Head

  • Culinary Head at Enderun Colleges, responsible for overseeing the Culinary Arts department, curriculum development, and spearheading all culinary courses
  • Has over 20 years worth of experience in the field of culinary arts worldwide, having worked at the Kempinski Hotel and Traders Hotel in China and at Bahnhof Buffet SBB Basel in Switzerland, among others
  • Led the kitchen operations of EDSA Shangri-La, Hyatt Regency Manila and Tagaytay Highlands
  • Underwent training at Alain Ducasse Education in France
  • Part of Philippine Airlines’ Master Chef series, where renowned guest chefs restyled the in-flight menu with a variety of international cuisines

Chef Marc Chalopin

  • Handpicked by Alain Ducasse Education as the executive chef of Alain Ducasse Institute Philippines,
  • Has 32 years of kitchen and teaching experience
  • Worked with two of the most exceptional and world-acclaimed chefs: Joel Robuchon and Alain Ducasse at 59 Poincaré of Le Relais du Parc
  • Joined Alain Ducasse Education and Enderun in 2008 to supervise the culinary program in Manila, control the quality of instruction and curriculum and teach advanced culinary classes

Chef Thomas Wenger

Director,
Restaurant 101

  • Senior culinary academic consultant at Enderun
  • Has 25 years industry experience, including posts as executive sous chef at The Oriental Singapore and Makati Shangri-La, and executive chef posts at Royal Hong Kong Jockey Club, Le Royal Meridien Bangkok, Le Meridien President Bangkok, and prior to Enderun, at Mandarin Oriental Manila
  • Trained at Ecole Hoteliere de Lausanne in Switzerland and The Royal Institute of Public Health

Bel Castro

Assistant Dean,
College of Hospitality Management

  • Earned her Psychology degree from the Ateneo de Manila University in 1985, which led her to the fields of advertising, public relations, events management, and line production
  • Earned a one-year Certificate IV in Restaurant Operations at Le Cordon Bleu in Australia, finishing with “High Distinction”
  • Became the first Filipino and the first Asian to be awarded an MA in Gastronomy in 2003, a double-badged program of Le Cordon Bleu and the University of Adelaide in South Australia, also finishing with “High Distinction”
  • WSET Certified and holds a Level 3 Award in Wines and Spirits

Wilson Gan

Vice President for Academic Affairs
Assistant Dean,

  • Graduate of bachelor’s degree in Management Information Systems, magna cum laude, from Ateneo de Manila University
  • Earned his master’s in Business Administration, major in Strategic Management from The Wharton School, University of Pennsylvania, where he was awarded the Joseph Wharton Fellowship for professional and academic achievement.
  • Was a systems analyst for employee services IT of Procter and Gamble Asia
  • Former business development manager for IBM Business Services
  • Former head of Customer Relationship Management Planning at Globe Telecom
  • Former consultant for the Boston Consulting Group in Singapore

Tricia Tensuan

Vice President,
Admissions and External Relations

  • Graduate of the University of the Philippines with a degree in Hotel Restaurant Administration and a diploma from Singapore Hotel and Tourism Education Centre
  • Has over 14 years work experience in the hospitality industry, with expertise in operations and marketing of hotels
  • Worked with Mandarin Oriental Manila in the food and beverage department
  • Pre-opening team of EDSA Shangri-la Hotel where she honed her front office skills and later becoming guest relations manager, then moved to the sales department
  • Consistently brought in the highest contribution as sales manager to the hotel’s total room revenue
  • Became part of the pre-opening team of Discovery Suites where she continued to be the top sales manager. In 2003, she was promoted to director of sales and marketing

Jovel Bernardo Cuaresma, PhD

Director,
Academic Success, and College Registrar

  • Graduate of Ateneo de Manila University with a degree in Management Engineering
  • Earned his MBA from the Ateneo Graduate School of Management, and PhD in Management from the International Academy of Management and Economics (IAME)
  • Has done consultancy work for private corporations, government agencies, and non-government organizations
  • Former instructor at the Ateneo de Manila University, Miriam College, IAME, Warnborough University (London), and the Entrepreneurship Institute of Australia
